In the region that stretches between Ciociaria and Agro Pontino, the buffalo supply chain, one of Lazio's authentic excellences, emerges with great relevance. This unique territory is characterized by distinctive and valuable agricultural and livestock production.
An exceptional variety of typical products distinguishes this region, including mozzarella, cheese and ricotta made from buffalo milk, with absolute authenticity and diversity. This food and wine offering stands out clearly not only from the rest of the province of Frosinone and Latina, but also in the broader scope of the region.
Crossing the chain of the Lepini Mountains, crossing the wide plain of Amaseno and ascending southward along the steep slope of the Aurunci, or northward, crossing the borders of the Pontine province to the Abbey of Fossanova in the territory of Priverno, panoramas of still unspoiled nature are revealed, encapsulating the history of those who lived on this borderland, between the ancient boundary between the Papal State and the Kingdom of the Two Sicilies. Here the strength of mountain currents and the gentleness of sea breezes meet, creating an evocative harmony.
The connection between nature and food has given Campodimele, located just beyond Vallecorsa, the record for longevity, while in Castro dei Volsci crafts stand out with the Queen Camilla Workshops, and within walking distance are the incredible Pastena and Falvaterra Caves.
These lands produce a wide range of extra virgin olive oils, many of which boast high quality standards. Among the dairy specialties, buffalo mozzarella from the Amaseno Valley, recognized for its extraordinary quality, excels. The highest expression of "marzoline," fresh or aged cheeses of remarkable flavor, obtained by processing goat's milk only at specific times of the year, is obtained on the heights.
Around Amaseno, the culinary art of buffalo and goat meats is also expressed, prepared in tasty stews or in flavorful cacciatore stews.
